Roast chunks of butternut squash and eggplant in the oven with some oil and cook the soba noodles according to the instructions. In the meantime, stir-fry thinly shredded cabbage in an oil of your choice, perhaps coconut oil with a handful of cilantro and cashew nuts. To make a fresh and delicious sauce, combine sesame oil, vinegar, soy sauce and brown sugar, and pour the mixture over your vegetables.


Thai soba salad with prawns


Take a large bowl, add a quarter cup of water and mix in some chopped shallots, chili-garlic sauce, sesame oil, salt, lemongrass, vinegar, soy sauce, coconut and peanut butter to make a delicious and spicy sauce.

Cook your soba noodles in a large saucepan and add shrimp to the pan for the final three minutes. Drain both, and when they become cool enough to handle, add to the peanut butter sauce along with fresh mint, cilantro and basil. Add a few lime wedges and plenty of seasoning.
